Beef Toast with Jalapeño Cheese Sauce

It's Euro 2024 season which also means easy, yummy snacks season! Here is one recipe the whole family could enjoy, football or not.
Beef toast with Jalapeño cheese sauce
Ingredients:
13 slices of white bread, crust removed
700g minced beef
½ yellow onion finely chopped
2 tablespoons garlic powder
Salt to taste
Black pepper to taste
Cooking oil for frying
Cheese sauce:
2 tablespoons butter
3 jalapeños/ 1 green chili, seeds removed and finely chopped
2 teaspoons smoked paprika
2 tablespoons flour
600ml milk
2 tablespoons garlic powder
400g cheddar, grated
100g mozzarella, grated
Salt, sugar, white pepper to taste
Method:
Cut your sliced bread into 4 pieces each slice, I like to cut mine into triangles. Once done, set aside uncovered while you prepare the other ingredients.
In a mixing bowl, add minced beef, yellow onion, garlic powder, salt and pepper to taste, mix well.
Scoop about a tablespoon of minced beef mixture onto each sliced bread and spread evenly. Place on a tray lined with parchment paper and keep in the refrigerator until ready to fry.
To make the jalapeño cheese sauce, melt butter in a pot over medium low heat, once butter is completely melted add chopped jalapeños and sauté for a minute or until fragrant, add smoked paprika and mix well, add flour and mix for another minute before adding the milk. Pour milk in a little at a time while whisking the mixture to avoid clumping. Keep whisking until the sauce thickens slightly.
Add garlic powder, salt and pepper to taste and mix well, add grated cheeses, turn heat down on low and mix until the cheese are completely melted. Let it cool slightly before serving.
In a pan, heat some oil to shallow fry the beef toast.
Once oil is heated, fry the beef toast, beef side down for 2-3 minutes, and fry the bread side for another minute. Remove from the pan and drain excess oil. Serve beef toast with jalapeño cheese sauce.
Note:
This recipe yields 52 pieces of beef toast, you can also freeze the assembled beef toast in a freezer safe container for up to 2 weeks, when ready to consume, thaw for 15 minutes before frying.
Use 80% beef 20% fats for your minced beef, minced beef with higher fat ratios, will result in a very oily, and chewy beef toast.
Beef Toast bersama dengan sos Keju Jalapeño
Bahan-bahan:
13 keping roti, dibuang kulit
700g daging cincang
½ bawang kuning, dicincang halus
2 sudu besar serbuk bawang putih
Garam secukup rasa
Lada hitam secukupnya
Minyak masak untuk menggoreng
Sos keju:
2 sudu besar mentega
3 biji jalapeño/1 cili hijau, biji dibuang dan di cincang halus
2 sudu kecil smoked paprika
2 sudu besar tepung gandum
600ml susu segar
2 sudu besar serbuk bawang putih
400g keju cheddar, disagat
100g keju mozzarella, disagat
Garam, gula dan lada putih secukup rasa
Cara penyediaan:
Potong roti kepada 4 bahagian setiap keping, saya suka potong segi tiga, ketepikan.
Dalam mangkuk, campurkan daging cincang, bawang, serbuk bawang putih, garam dan lada hitam secukup rasa, gaul rata.
Ambil kira-kira satu sudu besar campuran daging dan sapukan rata ke atas setiap keping roti. Susun di atas dulang yang dilapiskan dengan kertas minyak dan simpan dalam peti sejuk sehingga sedia untuk digoreng.
Untuk sos keju jalapeño, cairkan mentega dalam periuk atas api sederhana, masukkan jalapeño cincang dan tumis selama satu minit atau sehingga harum. Masukkan smoked paprika dan gaul rata, masukkan tepung gandum dan kacau selama satu minit sebelum tuangkan susu. Tuangkan susu sedikit demi sedikit sambil kacau menggunakan whisk agar sos tidak berketul. Terus kacau sehingga sos sedikit pekat. Tambah serbuk bawang putih, garam dan lada secukup rasa, masukkan keju parut, kecilkan api dan kacau sehingga keju cair. Biarkan sejuk sedikit sebelum dihidangkan.
Panaskan sedikit minyak dalam kuali untuk menggoreng roti daging.
Apabila minyak panas, goreng roti daging dengan bahagian daging menghadap ke bawah selama 2-3 minit, dan bahagian roti selama satu minit lagi. Angkat dari kuali dan toskan untuk mengeluarkan minyak berlebihan. Hidangkan roti panggang daging dengan sos keju jalapeño.
Notes:
Resipi ini menghasilkan 52 keping beef toast. Ianya juga boleh dibekuka selama dua minggu. Cuma perlu keluarkan dari peti beku selama 15 minit sebelum digoreng. Gunakan daging lembu cincang dengan peratusan 80% daging dan 20% lemak. Daging lembu dengan nisbah lemak yang lebih tinggi akan menghasilkan roti panggang daging yang sangat berminyak dan kenyal.
