Kuah Kacang 


Ingredients:

4 tablespoons dried chili paste

1 large pc Gula Melaka (Palm sugar), grated 

1-2 tablespoons tamarind paste, diluted with a little water 

3 cups of ground nuts, toasted and peeled ground in a food processor 

2 tablespoons toasted coconut paste/ kerisik

1 cup coconut milk

Salt 

Cooking oil

Blended spices:

10 shallots, peeled

4 cloves of garlic, peeled

2 inches of galangal, peeled, sliced thinly

5 lemongrass, sliced thinly

3 candlenuts

2 inches aromatic ginger / cekor  

Add a bit of water to it for easier blending 


Method

Heat a little oil in a pot or a wok and saute dried chili paste until the oil surfaces. Add blended spices and saute again until fragrant. Add water,  palm sugar, and tamarind let it come to a boil. Once boiling add groundnuts gradually and let it simmer until thickened slightly. Add Kerisik and coconut milk and season to taste with salt. Let it simmer until thickened and the oil surfaces again. Serve with satay or rice cakes. 


Kuah Kacang

Bahan-bahan:

4 sudu besar cili giling

1 pc besar Gula Melaka, diparut

1-2 sudu besar pes asam jawa, dicairkan dengan sedikit air

3 cawan kacang tanah, disangai, buang kulit dan dikisar 

2 sudu besar kerisik

1 cawan santan

garam

Minyak masak


Rempah dikisar:

10 bawang merah, dikupas 

4 ulas bawang putih, dikupas

2 inci lengkuas, dikupas, dihiris nipis

5 biji serai, hiris nipis

3 biji buah keras

2 inci cekur

Sedikit air


Cara penyediaan:

Panaskan sedikit minyak dalam periuk atau kuali dan tumis cili giling sehingga pecah minyak. Masukkan rempah kisar dan tumis lagi sehingga wangi. Masukkan air, gula melaka, dan asam jawa rebus sehingga mendidih. Setelah mendidih masukkan kacang sedikit Demi sedikit dan biarkan mendidih sehingga mula likat. Masukkan Kerisik dan santan dan tambah garam secukup rasa. Biarkan mendidih hingga pekat dan minyak pecah semula. Hidangkan bersama sate atau ketupat.
