Dendeng Balado Ala Padang (Padang-Style Spicy Crispy Beef)

Ingredients:
For the Dendeng (Beef):
1.2kg lean beef
3 pieces of dried tamarind slices (asam keping)
1–2 cups of water (not too much) for boiling
8 cloves garlic, blended
2 inches ginger, blended
2 tbsp ground coriander seeds
Salt to taste
Oil for frying
For the Sambal:
12 shallots
15 large red chilies
12 bird’s eye chilies (red)
6 cloves garlic
3 red tomatoes, quartered
150ml oil for sautéing
Salt to taste
Sugar to taste
4 kaffir lime leaves (remove the stems)
Instructions:
Preparing the Beef:
Marinate the beef with blended garlic, ginger, coriander, salt, and dried tamarind slices.
Boil the beef with just enough water to cover half of the meat until tender. Remove and set aside.
Once slightly cooled, thinly slice the beef against the grain.
If the slices are thick, pound them lightly to flatten. Arrange on a plate and let them dry slightly.
Heat oil in a pan and fry the beef over medium heat until crispy and dry. Remove and drain the excess oil.
Preparing the Sambal:
Pound or blend the shallots, garlic, red chilies, bird’s eye chilies, and tomatoes into a coarse paste.
Heat oil in a pan and sauté the blended ingredients.
Add a little water and cook over low heat until the mixture reduces.
Add the kaffir lime leaves and stir until fragrant.
Finally, add the fried beef into the sambal and mix well.
Remove from heat and serve with hot rice.

Bahan-bahan:
Dendeng:
1.2kg daging lembu tanpa lemak
3 keping asam keping
1-2 cawan air (tak terlalu banyak) untuk merebus
8 ulas bawang putih, dikisar
2 inci halia, dikisar
2 sudu besar serbuk biji ketumbar
Garam secukup rasa
Minyak untuk menggoreng
Bahan Sambal:
12 biji bawang merah
15 biji cili merah besar
12 biji cili padi merah
6 ulas bawang putih
3 biji tomato merah, dipotong empat
150ml minyak untuk menumis
Garam secukup rasa
Gula secukup rasa
4 helai daun limau purut (buang batang)
Cara penyediaan:
Dendeng:
Perap daging dengan bahan kisar, garam, dan asam keping.
Rebus daging dengan air sekadar menutupi separuh daging hingga empuk. Angkat dan ketepikan.
Setelah sedikit sejuk, hiris nipis daging mengikut urat.
Tumbuk daging jika tebal untuk meleperkan. Susun atas pinggan untuk dikeringkan sedikit.
Panaskan minyak dalam kuali, goreng daging pada api sederhana hingga kering dan garing. Angkat dan toskan.
Sambal:
Tumbuk atau kasar bawang merah, bawang putih, cili merah, cili padi, dan tomato.
Panaskan minyak dalam kuali, tumis bahan tumbuk/ kisar.
Tambah sedikit air dan masak dengan api kecil hingga air berkurang.
Masukkan daun limau purut, kacau hingga sambal naik bau.
Akhir sekali, masukkan daging goreng ke dalam sambal dan gaul rata.
Angkat dan hidangkan bersama nasi panas
