Spicy Deep Fried Fish with Thai Style sauce

Ingredients:
2 large sized barramundi/ seabass, gutted, fillet and sliced
½ cup cornstarch
Cooking oil for deep-frying
20 cloves of garlic, chopped
1 large red onion, finely chopped
10 red bird’s eye chillies, coarsely pounded/ blended without water
12 small bird’s eye chillies
1 lemongrass bruised
3 kaffir lime leaves, roughly torn
4 tablespoons oyster sauce
4 tablespoons Thai palm sugar
3 tablespoons fish sauce
1 key lime, juiced
2 bunches of coriander, roughly chopped
¼ cup water
Salt to taste
Cooking oil
Method:
Begin by heating oil in a wok. In a separate bowl, combine 2 teaspoons of salt with the cornstarch, mixing well. Coat the sliced fish with this mixture and deep fry until golden brown. Set aside to drain any excess oil.
Next, remove most of the oil from the wok, leaving about 3 tablespoons. Add chopped onion, garlic, small bird’s eye chillies, lemongrass, kaffir lime leaves, and some salt. Sauté until fragrant, then add red bird’s eye chillies, oyster sauce, fish sauce, Thai palm sugar, and ¼ cup of water. Allow the mixture to come to a gentle simmer before adding fresh coriander. Adjust the seasoning with more salt if needed.
Add the fried fish, mixing to combine, then turn off the heat. Serve immediately to enjoy the crispy texture of the fish, ideally accompanied by rice.
Siakap goreng cili Ala Thai
Bahan-bahan:
2 ekor ikan siakap saiz besar, dibersihkan, difilet dan dihiris
½ cawan tepung jagung
Minyak masak untuk menggoreng
20 ulas bawang putih, dicincang
1 biji bawang merah besar, dicincang halus
10 cili padi merah, ditumbuk kasar/ dikisar tanpa air
12 cili padi kampung
1 serai, dititik
3 daun limau kaffir, dikoyak kasar
4 sudu besar sos tiram
4 sudu besar gula kabung Thai
3 sudu besar sos ikan/ nam pla
1 limau nipis, diambil jus
2 ikat ketumbar, dicincang kasar
¼ cawan air
Garam secukup rasa
Minyak masak
Cara penyediaan:
Mulakan dengan memanaskan minyak masak dalam kuali. Tambahkan 2 sudu kecil garam ke dalam tepung jagung dan gaulkan rata. Salutkan ikan yang dihiris dengan tepung jagung dan goreng dalam minyak panas hingga keemasan, kemudian ketepikan untuk menapis lebihan minyak.
Buang kebanyakan minyak dari kuali, tinggalkan kira-kira 3 sudu besar. Masukkan bawang, bawang putih, cili padi kampung, serai, daun limau purut, dan sedikit garam. Tumis hingga wangi, kemudian masukkan cili padi merah, sos tiram, sos ikan, gula kabung Thai, dan air. Biarkan mendidih seketika dan masukkan daun ketumbar. Kacaukan dan tambah garam jika perlu. Masukkan ikan yang telah digoreng, gaul rata, dan matikan api. Hidangkan segera untuk menikmati tekstur rangup ikan. Sesuai dihidangkan dengan nasi.
